Before starting culinary school I had only made fresh pasta once, during a cooking class in Rome. I loved making the pasta while in the class but never ended up making it at home. At school we often made pasta dough, so I decided to give it a try at home. The pasta ended up being super simple to make and came together in no time at all.
If fresh pasta has always seemed like too much work I challenge you to give it a try. Not only is it delicious, I like how I have the control over the ingredients that go into the pasta.
I served my pasta simply with butter, parmesan cheese, toasted pine nuts, peas, and fresh cracked pepper – so that the pasta could really shine.
