This is one of my all time favourite cake recipes. It always turns out and everyone that tries it loves it!
German Apple Cake
Preheat oven to 350°F. Grease and flour two 9″ round cake pans.
In a standing mixer combine:
3 small, or 2 large eggs
1 cup clarified butter
Beat until foamy
Then add and mix in:
1 tsp. vanilla
2 cups white sugar
sift together:
2 cups flour
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
add to wet ingredients until fully combined, do not overmix
Then fold in:
4 cups thinly sliced apples ( I use Granny Smiths)
1/2 cup walnuts or pecans
Bake for approximately 45 -60 mins or until tester comes out clean. Allow to fully cool before icing the cake.
Cream Cheese Icing
In a standing mixture combine:
6 oz cream cheese
3 tbsp butter
1 tsp. vanilla
1 1/2 cups icing sugar (or maybe a bit more, until you reach desired
thickness).
Beat until light and fluffy
Spread the icing on one of the cake rounds. Top with the other cake round and ice the top and sides of the cake. Serve at room temperature.
